Ingredients
600g Chicken breast, skinless, raw, cubed
a few sprays of Frylight Stir-Fry Spray Oil
200g Mushrooms, sliced
1 clove Garlic,minced
1 cube Chicken stock cube, made up to 125ml with hot water
2 tablespoons Balsamic vinegar
Small sprig Thyme, Fresh
1 tablespoon Parsley, fresh, chopped
salt and black pepper
Method
Season
the chicken with salt and pepper. Spray a frying pan with the frylight
and heat over medium high heat.
Add the chicken and sear on both sides until golden brown, about 2-3 minutes. Remove the chicken and set aside.
Add the garlic and mushrooms to the skillet and cook for 3-4 minutes until mushrooms begin to soften.
Add the chicken stock, balsamic vinegar, and thyme to the skillet. Stir and scrape any browned bits off the bottom of the pan.
Add the chicken and sear on both sides until golden brown, about 2-3 minutes. Remove the chicken and set aside.

let simmer for 10-15 minutes on low heat or until chicken is fully
cooked.
Sounds delicious! Which Frylight do you use? I've never heard of it apart from your posts, but I just googled it and saw that there are 5 different versions/flavours. I did once have a spray pump which I used for olive oil, but it broke eventually. How long does a bottle last you, and does the mechanism last as long as the product?

ReplyDeleteI use them all for different things depending on what I am making ....for this one I would use the olive oil one
I bought one of those spray oil pumps from my WW meeting a long while ago but found that it didn't last very long in terms of thte mechanism and therefore just went on to use the frylight.....I do spray the oan and then heat it instead of heating the pan and then spraying ...because I found that the heat was evaporating the oil and therefore I was just getting a dry pan. I usually find a bottle lasts me quite a while.....I only use about 10 sprays because I don't want to add the points (and if the pan gets a bit dry I add a splash of water or stock)
The other thing for this recipe is that chicken thigh is much more flavoursome but I don't use it because I don't want the added points
