Make do dinner



Fully intended to go shopping today but was a bit busy so didn't.... ended up with a make do dinner.....foraged around in the fridge and came up with this. Its not a formal recipe (I'll include those when I can with ingredients listed etc) but here goes.

I had a salmon fillet going spare in there after my dinner last night....will post that another time...and some Butternut squash lanquishing in a plastic box that needed to be used up...and I ALWAYS have salad leaves in there...well you do don't you? One of my favourite things to do is make a sauce with Philadelphia cheese, usually I have all the flavours in the fridge so I can match the sauce to whatever I'm making (would have liked the chilli one with this) but sadly, because I needed to go shopping (!) the only one I had was the smoked ham one. So I spiralized the squash (I'm going to do a blog about spiralizers soon....LOVE my spiralizer!!) and made a little sauce by spraying a small frying pan with frylight and softening about a tablespoon of finely diced red onion, I then added a couple of tablespoons of white wine (also open in the fridge !!) and 2 tablespoons of the cheese allowing it to warm through slowly (if you let it get too hot and bubbly the cheese splits and you get a nasty cheesy mess...ugh). I microwaved the squash and then stirred in the sauce.

Served it on a hot plate with the chilli fillet on top (I warmed the fillet slightly in the microwave for 20 secs) and the salad in a pretty dish with WW balsamic glaze over it.

Have to say it was quite tasty for a quick throw together dinner. By my calculations the salmon would be 6sp, wine 1sp and the phildelphia cheese 2sp
